Cauliflower Pizza Crust | From the Kitchen of Elaine Zelker

Yield: 1 pizza crust
Ingredients
1 head cauliflower, stalk removed
1/2 cup grated Parmesan
1/2 teaspoon dried oregano
1/2 teaspoon parsley flakes
1/2 teaspoon garlic powder
1 egg, lightly beaten
Directions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or the like.

Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket and drain well. (I like to put it on paper towels to get all the moisture out. Be patient, and get out as much water as possible.) Let cool.

In a bowl, combine the cauliflower with the Parmesan, oregano, parsley, garlic powder and egg until it forms into a ball. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.

Add desired toppings (or skip this step) and bake an additional 10 minutes.

Optional: do not add toppings, cut into “breadsticks" and dip into your favorite sauce or eat alone.
